The first modification to my 03 Prius was to add a 1 kW inverter:

Within a month, we had occasion to use it. In the first year, we've used it twice, once last winter and once during a hot-spell last summer. We have a gas furnace and a 5,000 BTU window AC. Either can be run along with the TV and a few strategic lights. Consider it 'camping out at home.' <GRINS>

Do you know the power capability of your 12 VDC system?

One other approach has been to get a commercial UPS unit that uses a battery pack at the same voltage as the traction battery. This is a little more 'exciting' but can easily handle much larger loads. The concensus is our Prius should be able to go as high as 5 kW based upon some load testing Richard had performed.
