Now, why would you buy a bigger car if a smaller one completely satisfies your needs? Spend the money on something else, I say.
Interestingly enough I am 6'4" and and the driver seat offered me more legroom in the FEH... (Not to mention that the Highlander is borderline ugly...)
The Escape has plastic kitty cat toy ugly written all over it. Basicaly if you want a slower and smaller and an unsafe SUV that recived a tip-up rating making it prone to flipping because Ford is not smart enough to put or even offer Stability control on their Hybrid then buy the Ford Escape Hybrid. If you want a smooth looking, safe and very fast SUV hybrid that can seat 7 then get the highlander Hybrid.
