home brew takes what... 3 weeks? Longer?

Lots of time for infection and spoiling. Cleanliness DOES count for sure with that.

Here, we brew in hours, not weeks. There's not much time for spoiling, and I think it may "steam sterilize" between cycles, kinda like a dishwasher.
