I see different MPGs on my camry after I park my car!
some as low as 25 and some as high as 40 !

It shows up after each gallon is used or how?

I mean like the mpg is displayed after I have used a gallon of gas?

The MPG is calculated on an ongoing basis. It is displayed on the Eco Drive meter:

a. When you shut off your car.
or
b. When you set the dash display to Eco Drive by hitting the DISP button on the steering wheel.

You might be looking at the consumption screen (if you have it). It shows an average MPG and a BEST MPG. The Best is just the highest average MPG you were getting when you pressed the reset button.
