I have seen it (1 bar) once in my '06, but that was with A/C on in nearly stopped traffic. SO not that surprising.
One other thing to consider that I have seen elsewhere is that the fan uses a good bit of electricity, so even with the A/C off, you are still draining. Not enough to go from 5 to 1 that quickly, I agree...
Another thought I had was that the SoC doesn;t seem to be accurate. I watch mine do unusual things sometimes, and I believe that it isn't reflecting what is truly in the battery. So a sudden recal can shift the SoC far beyond what it was before. Lower or higher.
